The drinks list is entirely Australian. Signature cocktails are definitely the heroes, each of which pays homage to one of Sydney’s historical legends. Repin’s Coffee pays homage to Ivan Repin – one of the city’s first champions of good coffee – and is a take on the espresso martini, with Old Young’s smoked vodka from Perth, Mr Black Coffee Liqueur from the Central Coast and T Totaler chai tea milk from Sydney.

The Bold and Unforgettable truly lives up to its name, a heady combination of Poltergeist Unfiltered Gin stirred with Causes and Cures Semi Dry vermouth and garnished with a rosemary sprig. It is arguably one of the best Martinis in town.

Homage is also paid to activist Juanita Nielsen, who saved Victoria Street from high-rise development in the 1970s, with the Darling Juanita – a mix of Remedy dry gin, cucumber juice, basil, cracked pepper and mandarin syrup. There’s a dedicated list for Martinis, a drink that rose in popularity during the 1930s.
